Lincolnshire food is amazing. But it is the county’s delicious sausages that are my definite favourite. Lincolnshire sausages are famously fabulous. Why? Well, they are just so damn tasty.
The pork sausages are traditionally seasoned with sage, salt and pepper. A nice Lincolnshire sausage bap with HP sauce (okay, this could be considered a sacrilage) and fried onions is a lovely treat. They are so incredibly tasty in fact that I usually end up with indigestion afterwards as a result of wolfing them down way too fast.
A great meal for incorporating Lincolnshire sausages is a very British dish: bangers and mash. This kind of hearty food is perfect for this time of year. A big mound of fluffy mashed potato, Lincolnshire sausages, onion gravy and red onions. Delicious!
Lincolnshire butchers are so proud of their sausages that a lot of effort is made to protect the authentic recipe. The Lincolnshire Sausage Association currently has an ongoing campaign to secure a Protected Geographical Indication (PGI) for the bangers – which would mean only sausages made in the county using the correct recipe could be called Lincolnshire sausages.
Lincolnshire sausages are also celebrated with an annual sausage festival in the grounds of Lincoln Castle and Castle Square.

Ha ha, Guinness – nice choice! Nothing beats bangers and mash as a lovely hearty meal when it’s cold. Or, come to think of it, it’s a nice meal at any time of year.
Well now I know what I’m having for dinner and thanks to Roy I now want a Guiness as well! Hven’t had either in ages so I’m well overdue!

I didn’t know about Lincolnshire sausages until recently when I got to try them from a traditional sausage shop at the Christmas market in Nottingham town centre. And yes, they were delicious!
